Homegrown potatoes are so delicious as we have found out this summer when we harvested our first lot! Phil, a friend of mine gave me four little seed potatoes to try and I planted them in reusable plastic grow bags in early spring. To our surprise, after 5 months we harvested two whole bowls of beautiful fresh potatoes and they were so easy to grow!
As the stars of the show are the newly harvested Charlotte potatoes, I decided to spice them lightly in a simple and quick recipe. I washed the potatoes before cutting them in thick even slices.
I then mixed minced green chillies, minced fresh ginger, turmeric, coriander and cumin powder, lime juice, olive oil and salt to taste. I made a paste that could easily be applied to the slices and used a spoon to help me accomplish this task.
After this preparation, heat up a large shallow frying pan with a tablespoon of olive oil in it. Place the spiced potato slices into the heated pan carefully until it is full – only place in one layer so that they all cook evenly. Keep the heat on medium and cook for a few minutes before flipping the slices. Cook for a further few minutes before flipping them, both sides should be crisping up nicely. Cover with a lid, lower the temperature till cooked through.
Enjoy delicious lightly spiced potato slices!
Easy Spiced Potato Slices
A simple potato recipe that gives a delicious result that can be a delicious main or a side dish
- 1 large potato (I've used white homegrown Charlotte potato)
- 2 tbsp olive oil
- 1/2 tsp minced fresh ginger
- 1/2 tsp minced fresh green chillies ((add more if you would like it spicier))
- 1 tsp ground coriander-cumin powder ((or add 1/2 tsp each of ground coriander and ground cumin))
- 1/2 lime – juice
- salt, to taste
Slice the washed potato into thick even slices
Mix 1 tbsp olive oil and the rest of the spices and salt in a shallow plate
Spread the spice mixture on both sides of each potato slice with a spoon.
Heat up the remaining 1 tbsp of olive oil in a wide shallow pan on a medium setting
Place each spiced slice onto the heated pan carefully. Allow to cook for about 3 minutes and then flip the slices carefully.
Cook the second side for about 3 minutes and then flip all the slices. They should be looking a little crispy. Now lower the heat and cover the pan with a lid.
The slices will be cooked when a knife can easily slide into it, or press with a spoon and they should be soft right through. Enjoy warm as a side or as a main meal!
This recipe is versatile and can be eaten hot or cold, either way it is delicious!
